Elegant Green Beans |
| 1/4 cup olive oil
3 garlic cloves, minced 1 lb green beans, fresh or thawed frozen 1/4 cup vinegar 2 Tbsp mint leaves, fresh (3 tsp dried) salt and pepper 1/4 cup pine nuts or walnuts, toasted 1/4 lb haloumi or feta cheese In a large skillet, heat the oil over a medium heat and saute the garlic for 1 min. Add the beans, vinegar, mint, salt, and pepper. Cook, stirring, until crunchy done. Sprinkle with walnuts and Feta cheese, stir, and serve. |
