Fried Corn with Sour Cream Sauce

8 cups fresh corn
6 tablespoons butter
3 tablespoons olive oil
1 each red and green bell peppers; chopped
1  onion; chopped
3 tablespoons flour
3 cups sour cream
  salt and pepper
1 pinch chipotle pepper; ground

Fry corn in 3 tablespoons butter and 1 1/2 tablespoons olive oil; set aside.  Melt remaining 3 tablespoons of butter and olive oil, then add peppers and onion.  Cook over low heat, stirring frequently until tender. Add flour and mix well.  Add sour cream and continue to cook stirring constantly until thickened.  Season with salt, pepper, and ground chipotle pepper and serve with corn.

Yield: 6 serving
