Baked Eggplant with Cheese |
| 2 eggplants, Japanese, whole
3 eggs, beaten 1 1/2 cup cheeses (cheddar, swiss, parmesan), shredded salt and pepper 2 chili peppers, minced, OR 1/4 cup pimiento peppers, chopped Cut eggplants in half lengthwise and in a covered dish microwave until dead soft. Let cool and chop. Mix with eggs, cheese and peppers and bake in an oiled casserole at 350 degrees F until firm (about 1 hour). |
