How to Hard Boil Fresh Eggs 

so that They Peel!

This works for us.  Start by putting cold eggs in hot tap water and letting them sit there until they have warmed up.  If necessary, changing the hot water once. Then put them on the stove in the warm water, turn the heat on medium. Once the water comes to a boil, let it simmer for 15 minutes.  Take the eggs out of the simmering the water - keep the water on the stove!  Put the eggs into ice  water for 3 or 4 minutes.  Take the eggs out of the ice water and put them back into the simmering water for 3 or 4 minutes.  Repeat the ice water, simmering water step.  The third time you put the eggs into the iced water, leave them there until the eggs are cold, changing the ice water if necessary.  Now they will peel easily!
