| 1-2 lb albacore
2 cup vermouth (dry) 2 limes 1 onion 2 ribs celery (or dry flakes) rosemary herbs de Provence bay leaf basil parsley This recipe preserves the essential flavor of the fish while suppressing the very 'fishy' taste and aroma that oily fishes are heir to. Combine all but the first ingredient into a marinade sufficient to cover the fish (at least half way up its side). Marinate the fish several hours or overnight, turning occasionally. Bake the fish in its marinade in a 350 F oven until it is done. Discard marinade and serve with lemon wedges. |
